Welcome summer with our refreshing, sweet Strawberry Shortcake

StrawberryShortcake_smallFresh, juicy strawberries take the cake in this recipe – the perfect complement to any barbecue and al fresco meal.  

Kids in our Cooking for Life culinary arts training program enjoy making this recipe, using strawberries they have grown on our own rooftop garden.

Easy to make, friends and family will delight in this light-as-air shortcake and tangy, luscious strawberries in peak season.

Simply garnish with cool, rich whipped cream and serve up this pretty strawberry indulgence.

Ingredients

Cake
Bread flour (strong bakers flour) 2/3 cup
White sugar 2/3 cup
Eggs, lightly beaten 5 each
Salt 1/2 tsp
Vanilla extract 1/2 tsp
Heavy whipping cream, 35% 1 1/2 cups
Fresh strawberries, sliced 1 pint
For Finishing Cake
Heavy whipping cream, 35% 1 1/2 cups
Chocolate for shaving (use a cheese grater) 1/2 cup
Heavy strawberry syrup 1 cup
Fresh strawberries, whole 1/2 pint
Sugar 2 tbsps

Yield

One 12-inch cake

Method

  1. Whip together eggs, sugar, salt and vanilla for about 12 minutes in electric mixer. The consistency of batter should be light and airy.
  2. Sift flour; fold by hand, slowly but steady into the above batter.
  3. Pour into a greased and floured cake pan.
  4. Bake at approximately 200˚C for about 25 minutes or until cake tester comes out clean. It should be of a dry appearance and spring to the touch.
  5. Whip 1.5 cups of cream into soft peaks. Add 1 tbsp. of white sugar to help stabilize the whipped cream.
  6. Remove cake from pan and cut the sponge horizontally into two round layers. Soak with heavy syrup.
  7. Layer sponge with cream and place sliced strawberries on first layer. Repeat this step again, and then layer with top sponge.
  8. Whip 1.5 cups of cream into soft peaks. Add 1 tbsp. of white sugar to help stabilize the whipped cream.
  9. Cover with whipped cream and mask cake.
  10. Place whole strawberries on top of cake and sprinkle chocolate shavings for decoration.

12-inch round cake pan, stainless steel bowls, measuring spoons, measuring cups, cutting board, kitchen knife, electric mixer with whip attachment, rubber spatula
